Cake Recipe
Strawberry Cake Recipe –
·         175g (6oz) butter or margarine
·         175g (6oz) caster sugar
·         175g (6oz) self raising flour
·         3 medium/large eggs

Filling and Decoration-
·         300mil double cream with a tea spoon of icing sugar
·         3 tablespoons of strawberry jam
·         Fresh organic strawberries to decorate

Making the Sponge
1.       Cream together the butter and sugar until soft and light
2.       Gradually beat in the eggs
3.       Sift the flour and fold gently and carefully into the creamed mixture
4.       Divide the mixture between two 18-19cm lined sandwich tins
5.       Bake in the centre of the oven (180-190oC/350-375oF) or Gas Mark 4-5 for 20 minutes or until firm to the touch
6.       Turn out and allow to cool

Filling and Decoration
1.       Whisk together the double cream and icing sugar
2.       Coat one side of the sponge with the strawberry jam and a layer of the whisked cream
3.       Place the second sponge on top of the jam and cream covered sponge
4.       Use the remaining whisked cream to coat the top and sides of the cake
5.       Decorate the cake with strawberries
